Chocolate, Fig, Date Squares - A Raw Desert

Dehydrated Option

Option 2 mix and eat

This desert is both healthy and delicious. This is a raw desert and can be eaten immediately or put into a dehydrator. Either way it’s good. I think it is sweet enough from the dates in the recipe and does not require any extra sweetener.


3/4 cup dates – soaked 2 hours
1 cup black mission figs- soaked 2 hours
6 dried pineapple rings – soaked 1 hour
½ cup raisins – soaked 2 hour
½ cup grated coconut
1 cup coarsely ground walnuts
½ cup walnut pieces
½ tsp cinnamon
1½ tbs cacao or carob powder
(Optional Topping) 2 cups fresh pineapple pulp and 2 Tbs. raw agave syrup or honey

Drain the soaked fruit and reserve the water. Puree the figs, dates, and cacao powder in a little of the reserved water. I use a food processor for this, but you can use your Vita Mix or other blender. Add this to a larger bowl.

Grind one cup of walnuts in a coffee grinder or food processor add this to the mixture. Cut the soaked pineapple into small pieces and add this and the raisins to the mixture. Add the coconut and cinnamon.

Juice the fresh pineapple and set the pulp aside. You can also use a blender for this and strain the juice through a cheese bag to get the pulp. (keep the pineapple juice to drink, of course).

Option One: scoop out chunks of the mixture form into a circle, top with the pineapple spread serve. (You can add dab of yogurt, sour cream, ice cream, whipped cream or just eat it plain.

Option Two: Spread the mixture on a teflex sheet in your dehydrator to make a large square. Spread a layer of pineapple over the top and dehydrate until dry but still chewy (maybe about 7 hours). Once the top is somewhat dried you can flip it over by placing another tray on the top and turning it over carefully. Dehydrate the underneath side for about an hour. Cut into squares and serve.
