Avocado Pudding (A.K.A Avocado Ice cream)

This is a pudding that you can make in minutes and, believe me, it tastes nothing like avocado. Ask my son, the skeptic. When I let him taste, he loved it and could not believe it was Avocado.

Avocado Pudding (aka Avocado Ice Cream)

As in all the recipes I provide, take the taste test, make adjustments to suit your taste. You may have to adjust ingredients based upon the size of the avocados.

  • 2 avocados, soft and ripe
  • 1 teaspoon vanilla
  • 1/4 cup cocoa powder
  • 1/4 cup grade B maple syrup
  • 6 tablespoons milk ( coconut, almond, goat milk – use what you have)

1. Cut the avocados in half and remove pit. Scoop out flesh and put in the blender along with remaining ingredients.

2. Process until smooth, occasionally scraping down sides.  You may serve immediately.  I prefer serving it cold. Try making it early so that you can refrigerate before serving. (Put it in the freezer for a while. Then you can call it ice cream).

I love avocados and eat them almost daily. They are fabulous.  I call it a super fruit.  Avocados are rich in vitamins E, B6 and C. They contain 60 percent more potassium ounce for ounce that a banana. They are high in fiber and provide substantial amounts of folic acid, as well as some iron, copper and magnesium. They help in preventing cancer, stroke, heart disease, contribute to eye health and more.
